Egg Yolk Bread for Torrejas

Ingredients
    Main Ingredients
  • 2 1/2 cup All purpose flour (2 1/2 means 2 + 1/2)
  • 1 1/2 tsp Rapid rise yeast
  • 1/4 cup Sugar
  • 1/2 tsp Salt
  • 3/4 cup Milk
  • 6 tbsp Butter or margarine
  • 3 Egg yolks
  • 3 drops of yellow food coloring (optional)
  • 1/8 tsp Cinnamon powder
  • Sesame seeds
Instructions
  1. Place all the dry ingredients in a large round container. Make sure the yeast does not come into direct contact with the salt.
  2. In another container, place the liquid ingredients (WITHOUT the eggs) and do what is necessary so that the mixture reaches a temperature between 43 to 46 C (110 to 115 F). One way is to use a microwave oven to heat it up (15 seconds at a time so you don't overheat the mixture).
  3. Beat well the liquid ingredients with the dry ones.
  4. Add the egg yolks and beat again. If you have a hand mixer, beat the mixture for about 5 minutes until the dough is smooth.
  5. Cover the dough with plastic and let it rest for 1 hour in a place with a stable temperature and NOT low or very high. I put it in the microwave or in the oven off.
  6. Roll up your t-shirt sleeves :)
  7. When the dough has doubled in size, knead it with 1/4 cup of flour (spread the flour on the surface where you are going to knead).
  8. Grease two trays (For this recipe I use trays that measure 22cm long x 12cm wide x 7cm deep).
  9. Divide the dough into two equal parts, and place it into the 2 long greased bread containers.
  10. Cover the dough in the molds with a fabric for 1 hour.
  11. After the dough in the molds has rested for 1 hour, heat the oven to 190C (375F).
  12. Brush or spray a little water on top of the bread and sprinkle sesame seeds on top.
  13. Put the bread in the oven when it has reached the temperature mentioned above.
  14. Bake for 25 minutes or until brown on top. If you are going to make torrejas , let it cool before cutting it.
Recipe Notes

When greasing baking sheets, add a thin layer of margarine or oil. If desired, this bread can be eaten immediately after removing it from the oven either with coffee, milk, chocolate or a cold drink. But it can also be used to make torrejas. For this recipe I use baking sheets that measure 22cm long x 12cm wide x 7cm deep. Mixed numbers are used in recipes. 1 1/2 does not mean 1/2 but 1 and 1/2.
