Salvadorean Tomato Sauce

Ingredients
  • 9 Roma tomatoes
  • 1/2 Onion (diced)
  • 1/2 Sweet green pepper (diced)
  • 5 cylantro branches
  • 3 Garlic cloves
  • Salt to your taste
  • 1 tsp Oregano
  • 1 pinch black pepper
Instructions
  1. Cut the tomatoes into small pieces so that your blender has no trouble blending them.
  2. Cut the onion, and the pepper into small pieces.
  3. Put all the ingredients in the blender and blend. Stop the blender when you no longer see large pieces. If you blend the sauce a lot, it will be quite liquid.
  4. Put a pot over medium heat and pour the contents of the blender into it.
  5. When the sauce starts to boil (its color usually changes), let it boil for about 4 more minutes.
  6. Add salt to taste when the sauce has boiled for about 4 minutes. Then let it boil for another 5 minutes.
Recipe Notes

  • Add a little salt (about a teaspoon), stir in the sauce and taste it. If you think it needs more salt, add a little more. Repeat until you have the desired salt flavor.
  • If you feel that the sauce is too acidic for your taste, add half a tablespoon of sugar, stir it and taste it. Repeat until you have the desired flavor.
