Homemade Pizza with Cheese Crust

As kids in El Salvador, my husband and I watched the pizza commercials on TV and we wished it could be us on TV, eating it. Finally, growing up and living in the city, we got to try it for the first time. It was what we always imagined and more. My husband describes it as an explosion of flavors in his mouth.  A bite later and the first sip of cold soda affirmed his passion for pizza.

Now, after so long trying to make it by ourselves, we have come to this recipe that we share with you.

  • Combine the dry ingredients: flour, sugar, and salt. Mix them well.
  • Add the yeast once the previous ingredients are well combined.
  • Warm the water. The temperature of the water has to be between 43-46 ° C (110-115 ° F) so that it does not kill the yeast.
  • Add the warm water and olive oil to the dry ingredients and mix well. (We will end up with a sticky paste but that's okay because the dough still needs to be kneaded.)
  • Sprinkle 1/4 cup + 1 tablespoon of all-purpose flour on a flat surface where we will knead the dough.
  • Knead the dough for exactly 10 minutes on the surface with flour. After kneading, store it in a container with a lid where it does not vent air (or cover it well with plastic).
  • Place the dough to rest so that it doubles in size. Place it in a warm place, where cold gusts do not enter. I usually put it in the oven or microwave (WITHOUT turning it on) because they are the warmest parts of the house.
  • After the dough has doubled in size, remove it from the container.
  • PREHEAT oven to 190.6 ° C (375 ° F)
  • Sprinkle a little flour on a flat surface.
  • Put the dough on the surface that is sprinkled with flour and DIVIDE the dough in two if you want to make TWO small pizzas or use ALL the dough to make ONE giant pizza.
  • Flatten and round the dough and put it in a pizza pan, leave enough space on the edge to put cheese if you like.
  • If you are going to put cheese on the edge: wrap the cheese (preferably NOT grated, I like to use string cheese) with the dough so that the cheese is well wrapped on the edge. Pierce the pizza dough (not the edge) with a fork .
  • Top with a thin layer of tomato sauce as a base, then grated mozzarella cheese, and then add all your favorite vegetables and meats.
  • Put it in the oven and bake it for 25 minutes or until it looks light golden brown.
  • Take the pizza out of the oven when it has a light golden brown color on the edge (about 25 minutes).
  • Cut it into about 8-10 slices and show off to your family and friends that you can now make premium pizza :)

Notes

For active dry yeast, the water temperature should be between 105 and 110°F for proofing. While 95°F is the best temperature for yeast to multiply, that's not warm enough for proofing active dry yeast.

  • The yeast is added last to the dry ingredients because if the yeast has direct contact with the salt it will no longer work the same. In other words, salt kills yeast. :)
  • The oven should be at 190.6 ° C (375 ° F) before placing the pizza to bake.
