Beans and Cheese Pupusas

The beans-and-cheese pupusa  is one of the most popular varieties of pupusa in El Salvador.

  • In a container, place the corn flour for tortillas and the rice flour. Integrate the water and mix well with your hands.
  • In another container add the cheese, salt and water and knead until obtaining a homogeneous dough.
  • Prepare the fried beans for the pupusas: Liquify the beans in a blender. Pour them into a frying pan with 1tbs of oil in medium heat. Add salt to taste. Stir frequenly until it has a consistency close to what is in the picture. (Alternatively, you can buy the beans already fried or refried.)
  • Heat a comal or griddle a little more than medium heat and when the comal is hot, add a thin layer of oil (or spray oil).
  • Divide the dough/masa, cheese and beans into 14 equal portions.
  • Put oil on your hands.
  • Take a ball of dough. Pat it while you turn it. Your fingers are neither too far apart nor too close together. Pat until twice the thickness of a Mexican tortilla.
  • Put the beans and cheese in the center.
  • Start by making a ball with the dough you are holding to enclose the beans with cheese. You will have a ball of dough with ingredients inside (you can remove the excess dough as you can see in the image). If you don't notice any oil in the dough, put a little bit in it with your fingers.
  • Begin to pat gently. Your palming and the movement of your hands are turning the ball or pupusa. Put it on the comal or iron when it already has the circular shape. (If you cannot do this step, you can place the ball on the griddle and flatten it with your hand while you give it the circular shape.)
  • Flip the pupusa over with a spatula when you see that the edge has changed color (it doesn't look quite as white anymore, about two minutes).
  • When both sides are cooked remove them from the griddle.

  • If you've tried a lot and can't pat the tortillas and pupusa, follow this option: Place the dough on a large piece of plastic bag. Put another piece on top. Put something flat on top, like a plate, and flatten until it is about 4mm. Put the cheese and beans in the center. Wrap them with the dough. Put the plastic on it again. And smash again.
