In El Salvador, French bread has become a staple, especially enjoyed for breakfast.

French bread is also used to make Pan con Pollo (Chicken Sandwich) .

    Let's proof the yeast
  • Add the yeast and sugar to the water in a glass and stir well with a spoon.
  • Let it rest for 10 minutes in a warm place (not cold or too hot) so it can grow.
  • Let's prepare the dough
  • Add all the ingredients for the dough (except the flour) to a container).
  • Mix well and make sure the mixture has a temperature between 100 and 110 F (as required by the yeast in their instructions).
  • Put all the flour in a large container (or make a flour volcano on a table or kitchen counter).
  • Add the liquid mixture and the liquid yeast.
  • Mix and knead everything until you don't see any dry flour.
  • Make a ball, put a very thin layer of oil on top, cover it and put it to rest for 1 hour in a container in a warm place.
  • After 1 hour, take it out, put it on a table (sprinkle a little flour on the table if necessary), and roll into balls of 2 oz each. If you are making bread for Pan con Pollo (chicken sandwich), make a 3.5 oz. oval shape.
  • Put the portions on a lightly oiled tray. Leave them a space of about 3 fingers.
  • Cover them with a blanket and let them rest in a warm place for half to 1 hour until they double in size.
  • When they're almost the perfect size (doubled or more), put a pan of hot water on the bottom of the oven. Heat the oven to 350F (176.6C ).
  • Put the pan with bread in the middle or upper part of the oven. Let it bake for 30 minutes.

Notes

  • To let the bread rest, find a place in your house that stays warm (no cold drafts or hot air). Do not put it in the sun.
  • Yeast usually comes with instructions. Some require you to put it in sugar water, as we have done here. Others don't. Very hot water kills it, and water that is not hot enough cannot activate it.
  • Yeast and baking powder or baking soda are not the same. Yeast are living organisms that produce carbon dioxide, which makes bread dough rise.
